What’s it named after ?
A Tushkar is a type of spade traditionally used in Shetland to cut peat. It has a long blade and produces a turf with a medium to slow burn. The name comes from the Old Norse word ‘torfskeri’, from torf (‘turf’) + skera (‘to cut’). Our use of Lerwick Brewery’s Tushkar Stout in the recipe adds a gorgeous local craft beer to the mix.
