Sweet, caramelised onions, slow-cooked with balsamic vinegar and brown sugar, are the stars of the show in this sticky savoury jam. It makes a fabulous accompaniment to sausages, meats and cheeses, and a dollop adds a great depth of flavour to gravy or casseroles.

What’s it named after?
Taing, the name of our sweet, sticky onion marmalade, is also the name of a small grass-covered tidal island on the beautiful beach at Norwick, on the northeast coast of Unst. Although it looks unremarkable, Taing is of great interest to geologists. Eastern Unst is an ophiolite – where a section of the earth’s crust from beneath the ocean collided with an ancient continent 420 million years ago. At Norwick beach, next to Taing, is a shallow trench and you can see where the ophiolite and continent meet.
